Well, yaknow, he's 26 when the show starts ;) perhaps I'll put a (26 - at time of Pilot) note on it or something.
As for the other stuff, canon is canon, of course, but I thought maybe a note or an asterisk could be put in there just to be exhaustive.
One of the really tricky (and really fascinating!) things about this site that i didn't anticipate is the blurring of definitions between canon and speculation, meta and simple documentation... it's been really hard drawing the line, because if I don't specify boundaries... well, the site will blow out of control and take over the internet :D
So part of me is thinking that a discrepencies page will slip over into meta territory, with the potential to get huge (like a pop culture references page!), but on the other hand, i'm recognising (as you're saying!) that it's relevant to address these issues as part of the possible unreliability of the canon...
at any rate, it's all very exciting.
no need to apologise! i obviously love all of this stuff, and heck, it's on a website for fans such as yourself to get the most out of it as possible, so of course i want to hear what you're thinking :)
